Papadzul, a traditional Yucatecan dish

Bekare Transfers wants you to have one of the best times of your life during your vacations in Cancun and the Riviera Maya; and since we know food is a very important part of the perfect vacations, this time we want to introduce you to one of the most traditional and oldest dishes of the Yucatecan gastronomy, the delicious “papadzul”.

From the Maya papak (food) and dzul (lord or master), this dish is made of tortillas suffed with boiled eggs and rolled up, then dipped in a creamy green sauce, prepared with pumpkin seeds (pepitas), epazote and broth, served with chiltomate sauce, making it a real delight for your palate. They are something like enchiladas with the Mayan touch. Definitively a must-eat dish while on vacation in Cancun.

Papadzules recipe

1 kg tortillas
½ kg tomatoes
½ kg ground coarse pumpkin seeds
10 eggs
2 habanero peppers
1 bunch epazote
Oil
Salt to taste

Procedure:

Toast the pumpkin seeds; be careful not to burn them. Grind them into a paste.

Boil the eggs, peel and crush them with a fork.

Boil the tomatoes, the habanero chiles, and the epazote in 1 ½ liters of water with salt. Drain,  retaining the water, blend and fry in oil.

Dissolve the pumpkin paste in half of the water used to cook the tomatoes and chiles. Mix until it releases its oils. The resulting mixture should be reserved to bathe the tacos.

Add more water to the remaining pumpkin seeds to form a thin cream.

Immerse the warm tortillas in the pumpkin sedes mixture. Fill the tortillas with the mashed eggs and roll up; then serve them on a plate.

Cover the rolled-up tortillas with the pumpkin seed cream, tomato sauce and pumpkin seed oil. Serve and enjoy!
